Dragonfruit Smoothie Bowl

The best part of residency is vacation! Of course, vacations are only special if you’re working hard (and who doesn’t love a break).

The first half of the trip was spent with my family, and we went skiing in Beaver Creek, Colorado. We’ve skied in the past multiple times although it had been 7 years since my family last skied. Also B was a new skier (he used to snowboard like a good California boy).

Amazingly, we were able to coordinate everyone’s schedules – it’s so much harder to get together when you get older. 

My sister and dad skied just two days, and mom (who never liked skiing all that much) chilled at home. B, my brother, and I skied the full three days, and I’ve forgotten how physically demanding it is, especially all the blue slopes. I sadly quit exercising completely in second year of residency so I’m definitely not as in shape 🙁

B spent a lot of time eating snow on the mountain (he was so tired / sore from all his falling), but he turned a corner and learned by day three! He told me he appreciated all my “berating ski tips” (lean forward! Turn! Turn! Stoooop!)

Also, my brother and I skied our first black diamond run! It was short, but steep and full of moguls and I was super sore by then (“cramp city” as my brother called it).

Other highlights included eating tons of s’mores and exploring the hot springs (perfect rest day between ski days).

My dad bought a go pro camera to catch all the action, which we duct taped to my brother’s helmet (very classy). It’s fun seeing the footage, and my little brother definitely beats me in skiing now. We were lucky and had a ton of snow, including a blizzard on our second day of skiing.

As much as I love winter, I am looking forward to warmer days. It’s now actually turning to spring, so I’m sharing this dragonfruit smoothie bowl, full of dragonfruit, nectarines, bananas, and berries. I love all the colors so much! Enjoy!

Dragonfruit Smoothie Bowl

Ingredients
SMOOTHIE
1 large dragon fruit (pitaya) chopped
1/2 cup coconut milk canned, full fat
1/4 cup ice
1/2 banana
1/3 cup berries

TOPPINGS
dragonfruit, sliced
nectarine, sliced
coconut flakes

Directions
Add the fruit, coconut milk, and ice for your smoothie to a blender or food processor. Blend until smooth. You can add more fruit to thicken or more coconut milk to thin it as needed (smoothie bowls should be thicker than a regular smoothie).

Pour into a chilled bowl. Top with your chopped fruit toppings (and serve immediately.
