Chocolate Strawberry Overnight Oats

The end of residency is always bittersweet. I've made amazing friends and met wonderful mentors who I'll miss a lot.
The end of the year was much busier than anticipated, from social events, working on research projects, logistics of moving and credentialing for a new job / hospital system (the Pennsylvania licensing is quite tedious) on top of all the clinical duties (28 hour shifts til the end!). 

It's definitely a busier schedule than when I had all my free time during 4th year medical school.
Since my apartment lease ended May 30, I'm staying for a few with a dear friend (who is never home anyway thanks to her Ortho Trauma schedule). My rent payment is bringing Nike of course - her kisses and cuddles are quite valuable. She was very close to stealing Nike.
Moving is always a pain, but it's good for forcing one to clean out any clutter. It's amazing how many things, especially old/no longer used/unwanted things, you can accumulate in a few years. Nike was not a fan of all the boxes (especially because one fell on her, poor puppy).
We hired movers since we are moving quite a bit of furniture (my husband's advice to single guy friends - "date an Amazonian woman, not a tiny shrimp, so you don't have to carry everything yourself"). We also hired a one time cleaning service - the first time we ever had a cleaning service. The convenience and help was well worth the money for both, and felt like one step forward in being an adult.
Moving went as smoothly as moving can be; my furniture and my husband's furniture made it down to Philadelphia mostly unscathed, minus one couch leg. I'm excited about our new apartment since (in additional to finally living together with B) for the in unit laundry, our fancy kitchen, and having a gym in the building.
I'm sharing a recipe for my chocolate strawberry overnight oats - I made a lot of servings ahead of time so I could have breakfast easily on busy morning. Taza Chocolate of course always makes it delicious.

Chocolate Strawberry Overnight Oats


Ingredients
1 cup rolled oats
1 cup chocolate almond milk
2 tablespoons cocoa powder
1/2 cup greek yogurt
1 tablespoon chia seeds
strawberries
Taza chocolate (70%)
chocolate rolled wafer cookies

Directions
Combine your oats, milk, cocoa powder, and yogurt together. Place in the refrigerator, covered, for at least 2 hours or overnight.

Top with fresh strawberries, chia seeds, chocolate, chocolate rolled wafer cookies. Enjoy!
