Bailey’s Chocolate Cupcake with Bailey’s Buttercream Frosting
The months are flying by and I can’t believe it’s already February 2019! I made these gorgeous Bailey’s Chocolate Cupcakes a few months ago but didn’t have a chance to share them.


Luckily, these cupcakes are perfect for Valentine’s! Quick and easy too.
B and I are not drinkers, but I really like the flavor of Bailey’s in baking. I bought a massive Costco sized bottle of Bailey’s (to save money, right?), but in hindsight, it’s going to be tough finishing it before we move this year.
B gets bad Asian glow, and while luckily my alcohol dehydrogenase enzyme works just fine, I find the taste of alcohol very strong, so a little goes a long way for my tastebuds.


That half glass of Bailey’s in the photos here – well, it took me a week to finish it. I gradually mixed a few tablespoons in my milk and milkshakes.
For Valentine’s Day, B and I will be working and the weekend will be spent doing taxes. Very romantic (that’s how you know you’ve been together for many years).
We actually got real gifts for each other this year (combined with our dating anniversary, which is in February) – he got us a couples pajamas set from Etsy (very cute!), and I got us an expansion pack for Settlers of Catan, the newest board game we’ve been addicted to.


I’m not sure what we’re doing for Valentine’s dinner, but I have an awful lot of Bailey’s liquor we need to finish up, so I’m sure it’ll be accompanying dinner (or dessert).
Bailey’s Chocolate Cupcake with Bailey’s Buttercream Frosting
Ingredients
CUPCAKE
Chocolate Cake Mix
Bailey’s liqueur, to brush on
FROSTING
1 cup butter
4 cups confectioners’ sugar
1/4 cup Bailey’s liqueur
Directions
CUPCAKE: Prepare Chocolate cake mix according to directions and bake in muffin tins. Set aside and cool. Using 1/2 cup of Bailey’s liquid, brush generously on the cupcakes for added moisture and flavor
FROSTING: Cream room temperature butter with a hand mixer until smooth and fluffy. Gradually beat in confectioners’ sugar. add the Bailey’s liqueur beat until blended and smooth. Using a 1M tip, pipe the Bailey’s frosting onto your Bailey’s brushed cupcakes. Enjoy!
