Ben and Jerry’s Chunky Monkey

My family ate ice cream daily as I grew up. But Ben and Jerry’s was special…only for “grown ups” only because it was so rich (according to mom and dad); therefore, my siblings and I couldn’t have any (I’m not saying this makes any sense). If we were good, we might get a spoonful or two. As a result, Ben and Jerry’s was always put on a pedestal on the hierarchy of ice creams.

Of course now I’m a “grown up,” so I can eat all the Ben and Jerry’s to my heart’s belly’s content, hehe.

Chunky Monkey is B’s nickname for me, so it’s near and dear to my heart.

Chef Uy: I’m eating Chunky Monkey now. 
B: You’re my chunky monkey!
Chef Uy: Ok, you’re my Chubby Hubby then!
B: NOOOOOOOOOOOO!!!!!!!!!!!!!!!!!!!!!!

He doesn’t like his nickname as much, for some reason. I think it’s hitting close to home, hehe.

Ice cream is a highly satisfying bedtime snack, and I’ll read as I eat. Sometimes to humor myself before going to bed, I’ll read a journal with random funny quotes from B and me. This was my gift for him when we started long distance years ago, and it’s still going on. Amusing ourselves with silly nicknames from Ben and Jerry ice cream flavors is why we get along so well.

In case you’re trying to cut down on coronary artery disease, this recipe (originally Posted Oct 2013) is a much healthier (and cheaper) alternative. It’s not as creamy as the real deal, but it tastes pretty good. The higher the fat in the milk, and the more you stir it while it’s freezing, the creamier since you break up ice crystals.

Ben and Jerry’s Chunky Monkey

Ingredients
2-3 frozen bananas
1 cup whole milk
1/4 cup walnuts
1/4 cup chocolate chunks

Directions
Puree the bananas and milk with a blender until smooth.  Pour into ice cream maker and churn according to directions.

For those without an ice cream maker, pour into a large flat container and freeze until desired consistency (about 5 hours). Every half hour, stir the ice cream with a whisk to break up ice crystals to reduce iciness.

Add the walnuts and chocolate chunks once ice cream is churned. Enjoy!
