Chocolate Chunk Almond Oatmeal Cookies
Sharing a quick and easy chocolate chunk oatmeal cookie recipe with my favorite nuts – almonds.
Are these the most attractive cookies? No
But are they tasty? Yes!
I bought this lovely grey striped cloth since I felt it was time to update my cloth backdrops. I think the last time I bought any new accessories for food photography was 4 years ago!
I’ve always been a fan of color (especially blue) and used to think white was boring, but as I’ve gotten older, I’ve become more fond of neutrals and whites. When we moved to our current apartment, I wanted a more “grown up” style and we traded our bright blue rug for a nice grey, and our patterned blue bedsheets and pillowcases for a solid white.
Maybe it’s Pinterest and Instagram influencing me, but I just feel white is more soothing. And it’s also a great photography backdrop as a natural light reflector.

Chocolate Chunk Almond Oatmeal Cookies
Ingredients
1 cup butter, softened
1/2 cup packed light brown sugar
1/2 cup white sugar
2 large eggs
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
3 cups oats
1 cup chopped almonds
1 1/4 cup semisweet chocolate chips (I used Taza 70% Couverture Chocolate)
Directions
Preheat the oven to 350 degrees F. Line baking sheets with parchment paper
In a large bowl, cream together the butter and both sugars until smooth. Beat in eggs and vanilla. Combine the flour, baking soda, and salt in another bowl. Mix thee dry ingredients into the creamed butter and sugar until just blended. Mix in the oats, almonds, and chocolate chips. Scoop into baking sheets.
Bake for 12 minutes in the preheated oven. Allow cookies to cool. Enjoy!
