Chocolate Mug Cake (for two)

Sharing a fun recipe today – chocolate mug cakes! It’s one of those Pinterest ideas which I’ve always been intrigued by but never tried (and we all know those Pinterest posts never translate to reality).

Valentine’s is just around the corner, but February is a also special month of love to me since that’s B and my’s dating anniversary, 7 years ago.

Sometimes, I crave a good molten chocolate cake but don’t feel like full on baking, or I just want a single portion. I figured I might as well give these mug cakes a try with these cute new mugs I bought at the Peet’s coffee (from in my hospital cafeteria!) B says I have too many mugs already, but I don’t listen to him.

Mug cakes are great for busy people because literally all you need is a mug and a microwave.

I have a lot of general medicine rotations the second half of this year (can’t believe that I’m halfway through residency already!). I’ve been trying to get more comfortable managing patients independently in the hospital – it’s still a weird feeling sometimes being “the boss” of the team, but it’s been growing, and the attendings are great at giving you autonomy.

Unfortunately, my second half is also backloaded with busy rotations, so I’m just trying to juggle residency, research, blogging, and of course my little family with B and Nike. Hence, me resorting to mug cakes now.

Today’s recipe is a collaboration with one of my favorite companies – Taza Chocolate! I love their creative chocolate flavors – their chocolate bars and chocolate bark are always delicious, but their most unique item is their chocolate disc set.

In the Philippines we would drink a rich chocolate beverage made with similar chocolate discs, a nod to the Spanish influence. My mom used plain chocolate, but the Taza Chocolate discs come in a variety of flavors, including chili, cinnamon, coffee, vanilla, and more. Plus their packaging is just beautiful.

I know once I see these chocolate and my new aztec patterned mugs, I had to combine them into a recipe together!

This chocolate mug cake is adapted from Ree Drummond of Food Network. I ended up making a lot of these chocolate mug cakes while trying to figure out the best ratio and amount of ingredients for my mug; I gave the extras away to my fellow residents and neighbors – it’s a good way to make friends so they can watch your puppy haha 🙂

Chocolate Mug Cake (for two)

1/2 cup all-purpose flour
1/4 cup sugar
1/4 cup cocoa powder
2 oz Taza chocolate discs, chopped
1/2 teaspoon baking powder
Pinch of salt
6 tablespoons almond milk
1/4 cup vegetable oil

Combined the flour, sugar, cocoa powder, chopped chocolate, baking powder, salt in a 12 ounce microwave safe ceramic mug; mix thoroughly with a fork. Add the milk and vegetable oil and stir until smooth (should be thick like brownie batter).

Microwave for 60 seconds, adding 15 second increments as needed. Do not overcook or the cake will be dry (it should be the consistency of a molten lava cake). Dust with powdered sugar – enjoy!

  1. I want this so badly but I'm living in Asia (crying emoji insert here) i don't think Taza Chocolate is in Thailand. Tsk. This is super nice and easy and only done in microwave. this is so good for me because I honestly don't know how to cook or bake and it so easy for me and then it only need microwave, its definitely super perfect for me because i don't have an oven only microwave. But sad to say it's not in Asia :C
