Red, White, and Blue Fruit Pizza
Happy 4th of July! I’ve been SO excited to make a flag dessert since the beginning of Pinterest, but needed a crowd to do so (a tiny flag doesn’t do America justice)
My cousins from California flew to visit her sister/my cousin who is doing an internship in East Connecticut. By pure stroke of luck, B, my brother, and I are all off, so we met up together in New Haven since I was the most centrally located. So I had my perfect taste testers all ready.
The berries are from my favorite orchard, Lyman Orchards. B hates picking berries since it’s so much work – particularly because when he puts 10 berries in the bucket, I end up eating 9 of them. It’s a rather Sisyphean task. The strawberry season was ending, but the raspberries and blueberries were bursting out of the bushes.
I prefer cookies over cake, so I made a flag using fruit pizza rather than fruit cake. Sugar cookie adapted from Alton Brown. The frosting is whipped cream and cream cheese together.

Red, White, and Blue Fruit Pizza
Ingredients
SUGAR COOKIE BASE
3 cups all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon salt
1 cup unsalted butter, softened
3/4 cup sugar
1 egg, beaten
4 tablespoons milk
TOPPING
1 pint heavy whipping cream
1 teaspoon vanilla
1 8-oz package cream cheese
1/2 cup sugar
raspberries and blueberries to top
Directions
SUGAR COOKIE BASE:
Sift together flour, baking powder, and salt. Set aside. Place butter and sugar in large bowl of electric stand mixer and beat until light in color. Add egg and milk and beat to combine. Put mixer on low speed, gradually add flou and beat to combine. Divide the dough in half, wrap in saran wrap, and refrigerate for an hour.
Preheat oven to 375 degrees F when ready to make. Roll the cookie into a large rectangle (or circle) and place on top of waxed paper. Chill for 10 min, the bake for about 8-10 min until brown around the edges. Let is rest and cool
TOPPING:
Beat the heavy whipping cream and vanilla extract to firm peak stiffness in one bowl. In another bowl, beat the cream cheese, sugar together until snooth. Gentle combined the creams together. With a 1M piping tip, pipe on top of the cooled cookie base. Decorate the american flag pattern with the berries. Serve immediately.
