Turkey Sprout Tea Sandwiches

February is the month of all my family’s birthdays. As we get older, giving birthday presents gets so much harder, so instead of giving items, we’ve tended to give “experiences.”

Last year, my parents jet-setted off for London as all of the kids were stuck in school and work. For their birthdays, they wanted to have “high tea” (my parents have birthdays just a day apart). I’ve never been to London, but it’s always been on my bucket list. My parents had a blast with their high tea and sent cute photos.

Recently, I needed a new teapot badly and spent forever agonizing which teapot to get. I sent B a million teapot links. ike most husbands, he was rather disinterested in which teapot would grace our counter.

I ended settling on this cute blue teapot, and my husband breathed a sigh of relief when he no longer was inundated with teapot photos.

Because I still haven’t been to London sadly (despite living so close on the east coast), I made my own little tea party, and I’m sharing these turkey sprout tea sandwiches. B loves sprouts and bought some, so we had extra sprouts that needed to be used up.

Growing up, we ate lots of sandwiches because it was cheap and portable for school, sports practice, and traveling. I didn’t mind the crust too much but always avoided the ends of breads. 

My biggest pet peeve however is untoasted bread. So classic tea sandwich bread is served cold and soft, but since I’m eating them all, I toasted the bread lightly. That’s the perk when you make your own food.

Turkey Sprout Tea Sandwiches

Ingredients
4 slices bread
handful sprouts
4-5 slices turkey meat
3 slices swiss cheese
1 avocado, mashed
salt and pepper, to taste

Directions
In a bowl, mash the avocado with a fork. Add salt and pepper to taste.

On a slice of bread (I toasted mine but classically they are not toasted), layer the turkey meat, swiss cheese, and sprouts. On another slice of bread, spread the mashed avocado. Combine the sandwich and slice diagonally. Serve with tea and enjoy.
