Dragonfruit Passionfruit Mango Smoothie

Kauai is known for adventures, and one of the busiest days was hiking the Kalalau trail. I was a bit nervous if we could do it carrying a toddler and baby given the cliff drop offs, and I was so proud the whole family was able to hike the 4 mile round trip portion (2 miles to Hanakapi’ai Beach and 2 miles back). I had quickly booked the reservation shuttle once it was available and told my family they needed to start training.

We had brought a soft carrier as well as a big hiking carrier to carry the girls, as well as lots of and lots of water. The girls were extremely heavy (B and my brother split carrying Izzy, while I carried Alanna the whole way), the sun was extremely hot, and it was one of the hardest hikes we had done but the views were breathtaking. Both Hanakapi’ai Beach and Ke’e beach were breath taking, and I wish we could have stayed longer but we had to head back.

On our way back we saw one straggling man suffering from heat exhaustion, and we gave him our water. We thought he would have to be airlifted out, but he eventually made it.

Once we got back from the hike, nothing was better than making and drinking this amazing smoothie at our hotel by the infinity pool. One of my favorite Hawaii Costco items was the frozen dragonfruit passionfruit mango mix (which you can see here), and it was such an easy snack.

We brought back an entire check-in luggage full of food from the Kauai Costco, and I regret only bringing back one frozen bag of that dragonfruit mix. Unfortunately our local Costco does not carry this dragonfruit passionfruit mango mix (I’ve been on the lookout), so I’ve had to recreate this magical smoothie using the individual fruit. For me, passionfruit is the most difficult of the fruit to find, but it’s well worth it. I love the granola for a nice crunch!

Dragonfruit Passionfruit Mango Smoothie

Ingredients
  

  • 1/2 cup diced frozen dragon fruit (pitaya)
  • 1/2 cup frozen mango
  • 1/2 cup frozen passionfruit
  • 1 1/2 cups milk of choice
  • crushed ice to blend as needed
  • 1/4 cup granola

Instructions
 

  • Add all the frozen fruit, milk, and crushed ice to a blender and blend on high until smooth. Add the granola on top or blend it in. Enjoy!
